Tastebuds Catering Serves Up Successful Parties

South Florida For the past 18 years, Tastebuds Catering has been front and center, serving their highly sought after catering menus at corporate and charity events, family celebrations and everything in between.

“Our menus today truly reflect the changes in our customers’ lifestyles,” said Rachel Gebaide who together with her husband, Larry, and their sons, Michael and Christopher are the managing partners of Tastebuds Catering, one of South Florida’s leading corporate and special event caterers.

Tastebuds Catering has been in business since 1995 and is the caterer of choice for many well-known businesses and high profile events.

“Gone are the days of deep fried and greasy hors d’oeuvres oozing with oil,” said Larry Gebaide. “People today are so aware of what they put in their bodies and our menus reflect these new trends,” he added.

According to Tastebuds Catering, one of the strongest trends, across the board, is the “small plate” concept. “In our experience, guests love trying a wide array of different food items, but in smaller amounts,” Rachel Gebaide said.

Some of Tastebuds’ most popular items is Tuna Tartare on an Edible Wasabi spoon as well as shredded BBQ Beef served on a small square of cornbread and topped with slaw.

Their signature sliders, from Mediterranean Chicken to Filet with Gorgonzola Cr?me and Apple Wood Bacon, “are always a winner, easy to eat, delicious and filling,” says Executive Chef, Christopher Gebaide.

Other popular items are bite size squares of flaky homemade spanakopita, crunchy coconut shrimp and a baked brie that is a work of art. “These are some of our signature dishes that have stood the test of time.”

Another popular item on the menu are Tastebuds’ “Soup Shots” served either hot or cold. “Soups are comfort foods and our flavors really tantalize the taste buds. Soup Shots are also a great ways for people to make conversation,” she added.

When Tastebuds caters an event they know that the overall success of the party is the quality of the food. Using exceptional ingredients, farm to table items and local sourcing has always been a priority at Tastebuds Catering. “We have been doing this for years,” said Larry Gebaide.

When you have been at the helm of serving delicious food at thousands of parties you are bound to see changes. “More and more people don’t want long buffet tables. They want their guests to mingle and not wait in lines for their food,” said Rachel.

Michael Mack, General Manager, puts his final touches by decorating the tables with fresh flowers. “Flowers on a table convey that the menu was thought out and no detail was left unturned,” he added.

One item that will always be a crowd pleaser is chocolate. ‘No matter what, everyone devours the dessert table,” Larry said with a twinkle. “Chocolate will always be in!”

Chef Diana Rodriguez has been working in catering for over ten years and has an extended amount of experience with modern international cuisine. Her passion and desire to create amazingly unique, yet flavorful dishes is extraordinary. We are excited for a wonderful future and continued success with her on our team!

Ceviche

There is nothing more tasty than a fresh fish ceviche!  Ceviche can be made with a variety of fish and vegetables.  Here is a classic ceviche recipe using mahi mahi fish.  This is perfect for an appetizer or an hors d-hourve for a family get-together.

Ingredients:

1 large yellow onion diced
1 tb Tabasco
1/2 bunch fresh cilantro chopped
1 lb Mahi Mahi diced, raw
2 tb Kosher salt
3 tomatoes diced
1/2 c fresh lime juice
1/2 c fresh lemon Juice

Avocado (optional: add on top as desired)

Preparation:

Mix all the ingredients and allow to marinate at least 1 hr. Drain off excess juice and enjoy with tortilla chips or tortillas.  Remember, it is only good for three days at the most! Discard after that time.
